Kazanlak, Rose Valley (Rozovata Dolina)
Kazanlak is in the Valley of Roses, Rozovata Dolina, in central Bulgaria, where the damask rose is grown at elevations between 370 and 625 m. Picking begins in May and runs for 20 to 30 days, from 5 or 6 in the morning until 11 or 12.
The Bulgarian rose oil made here is a protected name in the EU register; the picking window and the elevations above are its own words. The point on the map is a representative point for the town from Wikidata, not a field, and the clock beside it is local time: a fact, not a claim about the harvest.

- softened · Picking starts in the early morning and ends around noon, before the heat of the day. It takes an enormous weight of hand-picked petals to make a single kilogram of rose oil. (was: Harvest begins before sunrise — the flowers must be picked before the heat of day begins to volatilize the delicate esters that define rose’s character. One kilogram of rose otto requires roughly four tons of hand-picked petals.)
